    This Creamy Vegan Tomato Basil Bisque is a delightful blend of ripe tomatoes and fresh basil, creating a silky smooth soup that’s both comforting and refreshing. It’s perfect for any season and offers a velvety texture enhanced by the creaminess of coconut milk, making it indulgent yet light. The bisque is aromatic with garlic and onions, and the addition of nutritional yeast gives it a subtle cheesy flavor without any dairy. Serve it with crusty bread for a complete meal.

    Ingredients

    • 2 tbsp olive oil
    • 1 onion, chopped
    • 3 cloves garlic, minced
    • 6 cups ripe tomatoes, chopped
    • 1 cup vegetable broth
    • 1 cup coconut milk
    • 1/4 cup fresh basil, chopped
    • 2 tbsp nutritional yeast
    • Salt and pepper to taste

    Steps:

    1. Heat olive oil in a large pot over medium heat.
    2. Add chopped onion and sauté until translucent, about 5 minutes.
    3. Add minced garlic and continue to sauté for another 2 minutes.
    4. Stir in the chopped tomatoes and vegetable broth. Bring to a boil.
    5. Reduce heat and let it simmer for 20 minutes.
    6. Stir in coconut milk, fresh basil, and nutritional yeast.
    7. Season with salt and pepper to taste.
    8. Serve hot, garnished with additional basil if desired.
