Ingredients
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups ripe tomatoes, chopped
- 1 cup vegetable broth
- 1 cup coconut milk
- 1/4 cup fresh basil, chopped
- 2 tbsp nutritional yeast
- Salt and pepper to taste
Steps:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and continue to sauté for another 2 minutes.
- Stir in the chopped tomatoes and vegetable broth. Bring to a boil.
- Reduce heat and let it simmer for 20 minutes.
- Stir in coconut milk, fresh basil, and nutritional yeast.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional basil if desired.
