These crispy taro croquettes make a unique and tasty vegan treat. Made with a creamy taro filling and coated in a golden crispy layer, they’re perfect for any special occasion or as a delightful snack any time.

Ingredients

  • 2 cups taro, peeled and cubed
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup non-dairy milk
  • Oil for frying

Steps:

  1. Boil the taro cubes until soft, then mash until smooth.
  2. Season the mashed taro with salt and pepper, then let it cool.
  3. Form the taro mixture into small balls, then freeze for 15 minutes to firm up.
  4. Prepare three bowls for breading: one with flour, one with non-dairy milk, and one with panko breadcrumbs mixed with cornstarch.
  5. Dip each taro ball firstly in the flour, then the non-dairy milk, and finally in the panko mixture.
  6. Drain on paper towels and serve hot.
