Recipe Description

A light and crispy batter encasing fresh vegetables, served with a savory dipping sauce for the ultimate vegan treat.

Ingredients

  • 1 cup ice-cold water
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups mixed vegetables (bell peppers, sweet potatoes, broccoli, zucchini)
  • Oil for frying
  • Soy sauce for dipping

Steps:

  1. In a bowl, mix the flour and salt. Gradually add ice-cold water to the flour mixture and gently mix until just combined; it’s okay for the batter to be lumpy.
  2. Heat the oil in a deep fryer or large pan to 350°F (175°C).
  3. Dip vegetables into the batter to coat evenly and fry in batches, making sure not to overcrowd the pan, until golden and crispy, about 2-3 minutes.
  4. Remove the tempura from the oil and drain on paper towels.
  5. Serve hot with soy sauce for dipping.
