Recipe Description

It’s all Greek Salad to me, and I couldn’t be more pleased with the translation! Crunchy, chunky, vibrant veggies and creamy feta come to life in a light, herby Mediterranean dressing.

Ingredients

  • 3 tomatoes (chopped)
  • 1 cucumber (chopped)
  • 1 onion (thinly sliced)
  • 1/2 cup kalamata olives
  • 1/4 capers
  • 1 cup vegan feta
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • salt and pepper to taste
  • 1 tsp oregano

Steps:

  1. In a large bowl, combine the tomatoes, cucumber, onion, oliversr, caper, and vegan feta.
  2. Drizle with olive oil and red wine vinegar
  3. season with salt and pepper, oregano
  4. toss gently
  5. serve
