Ingredients
- 1 cup pearl barley
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, diced
- 2 stalks celery, diced
- 1 teaspoon thyme
- 1 bay leaf
- 6 cups vegetable broth
- Salt and pepper to taste
Steps:
- Rinse barley under cold water until water runs clear.
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
- Add carrots and celery to the pot, cook for about 5 minutes.
- Stir in thyme and bay leaf, cook for 1 minute.
- Add barley and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for 30-35 minutes, or until barley is tender.
- Remove bay leaf before serving.
- Serve hot.
