Ingredients

  • 1 cup pearl barley
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon thyme
  • 1 bay leaf
  • 6 cups vegetable broth
  • Salt and pepper to taste
