    Ingredients

    • 2 tablespoons olive oil
    • 1 onion, chopped
    • 2 garlic cloves, minced
    • 3 carrots, diced
    • 2 stalks celery, diced
    • 1 teaspoon thyme
    • 1 bay leaf
    • 6 cups vegetable broth
    • Salt and pepper to taste

    Steps:

    1. Rinse barley under cold water until water runs clear.
    2. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
    3. Add carrots and celery to the pot, cook for about 5 minutes.
    4. Stir in thyme and bay leaf, cook for 1 minute.
    5. Add barley and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer for 30-35 minutes, or until barley is tender.
    6. Remove bay leaf before serving.
    7. Serve hot.
