Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 2 teaspoons sesame oil
  • 200g udon noodles
  • 1 carrot, thinly sliced
  • 2 green onions, chopped
  • 100g baby spinach
  • 1 cup shiitake mushrooms, sliced
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • Optional toppings: chili flakes, nori strips, sesame seeds

Steps:

  1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.
  2. Add the carrots and mushrooms to the pot and cook for about 3 minutes.
