Ingredients
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 2 teaspoons sesame oil
- 200g udon noodles
- 1 carrot, thinly sliced
- 2 green onions, chopped
- 100g baby spinach
- 1 cup shiitake mushrooms, sliced
- 1 teaspoon grated ginger
