Ingredients
- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 tablespoons ground flaxseed
- 1/4 cup tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1/4 cup chopped fresh herbs (thyme, rosemary, parsley)
- Salt and pepper to taste
- Tomato glaze: 1/4 cup ketchup, 1 tablespoon maple syrup, 1 tablespoon balsamic vinegar
Steps:
- Rinse lentils under cold water. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce to a simmer. Cook until lentils are tender, about 20 minutes.
- Preheat oven to 375°F (190°C).
- In a large bowl, combine cooked lentils, onion, garlic, breadcrumbs, ground flaxseed, tomato paste, soy sauce, smoked paprika, olive oil, and herbs. Mix well. Season with salt and pepper.
- Transfer mix to a greased loaf pan, pressing down firmly.
- In a small bowl, mix ketchup, maple syrup, and balsamic vinegar. Spread this glaze over the top of the loaf.
- Allow to cool before slicing. Serve warm.
