Recipe Description
These flaky, savory patties are filled with spiced lentils, making them a perfect vegan snack or meal that’s bursting with flavor.
Ingredients
- 2 cups of all-purpose flour
- 1/2 cup of cold water
- 1/4 cup of coconut oil
- 1 cup of dried lentils
- 2 cloves of garlic, minced
- 1 small onion, chopped
- 1 tsp of ground turmeric
- 1 tsp of curry powder
- 1/2 tsp of thyme
- Salt and pepper to taste
- Vegetable oil for frying
Steps:
- To make the dough, mix flour and a pinch of salt, then cut in coconut oil until the mixture resembles breadcrumbs. Gradually add cold water until a dough forms. Cover and chill for 30 minutes.
- Cook lentils in water with a pinch of salt until tender but not mushy, drain and set aside.
- In a pan, sauté garlic, onion, turmeric, curry powder, and thyme until the onion is soft. Add cooked lentils and cook for another 5 minutes. Season with salt and pepper.
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface and cut into circles. Place a spoonful of the lentil filling onto half of each circle. Fold over and seal the edges with a fork.
