Ingredients
- 2 pounds small potatoes, halved
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 garlic cloves, minced
- 1 teaspoon rosemary, chopped
- 1 teaspoon thyme, chopped
- Salt and pepper to taste
Steps:
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the potatoes with olive oil, lemon juice and zest, garlic, rosemary, thyme, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast for 45 minutes, or until the potatoes are golden and crisp, turning them halfway through the cooking time.
- Adjust seasoning if necessary and serve hot.
