Ingredients
- 2 tbsp olive oil
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 1 carrot (minced)
- 1 celery stalk (finely diced)
- 1 cup brown lentils (diced)
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and Pepper to taste
- 2 cup vegetable broth
- 1/2 cup red wine (optional)
Steps:
- Heat olive oil in a large pan over a medium heat
- Add onion and garlic sauté until soft
- Stir in lentils, crushed tomatoes, tomato paste, oregano, basil, salt, and pepper
- Pour in vegetable broth and red wine; bring to a boil
- Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- Serve over cooked pasta or zucchini noodles
