    Ingredients

    • 2 tbsp olive oil
    • 1 onion (finely chopped)
    • 2 garlic cloves (minced)
    • 1 carrot (minced)
    • 1 celery stalk (finely diced)
    • 1 cup brown lentils (diced)
    • 1 can (28 oz) crushed tomatoes
    • 2 tbsp tomato paste
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • Salt and Pepper to taste
    • 2 cup vegetable broth
    • 1/2 cup red wine (optional)

    Steps:

    1. Heat olive oil in a large pan over a medium heat
    2. Add onion and garlic sauté until soft
    3. Stir in lentils, crushed tomatoes, tomato paste, oregano, basil, salt, and pepper
    4. Pour in vegetable broth and red wine; bring to a boil
    5. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
    6. Serve over cooked pasta or zucchini noodles
