    Recipe Description

    Enjoy a unique twist on traditional breakfast pancakes with these vegan Mesquite Pancakes. Infused with a subtly sweet, smoky flavor from mesquite flour, these pancakes are not only delightful but also packed with nutrients. Earthy undertones complemented by the richness of vegan ingredients create a perfect breakfast for any day. They’re easy to whip up and sure to impress both vegans and non-vegans alike.

    Ingredients

    • 1/2 cup mesquite flour
    • 2 tbsp sugar
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 1 cup almond milk
    • 1 tbsp apple cider vinegar
    • 2 tbsp vegetable oil
    • 1 tsp vanilla extract

    Steps:

    1. Mix the dry ingredients together in a bowl.
    2. In another bowl, mix the wet ingredients.
    3. Pour wet ingredients into dry ingredients and stir until just combined.
    4. Heat a non-stick skillet over medium heat.
    5. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
