Recipe Description
A vibrant and flavorful Moroccan stew cooked slowly to perfection. It’s loaded with vegetables, spices, and herbs, making it a filling and nutritious vegan meal.
Ingredients
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1 sweet potato, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 zucchini, chopped
Steps:
- Heat olive oil in a large pot or tagine over medium heat.
- Add onion and garlic, cook until softened.
- Stir in cumin, coriander, and cinnamon.
- Add sweet potato, carrots, bell pepper, and zucchini. Cook for 5 minutes.
- Add chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
