Ingredients
- 1 onion, chopped

- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1 sweet potato, peeled and cubed
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 zucchini, chopped
Steps:
- Heat olive oil in a large pot or tagine over medium heat.
- Add onion and garlic, cook until softened.
- Stir in cumin, coriander, and cinnamon.
- Add sweet potato, carrots, bell pepper, and zucchini. Cook for 5 minutes.
