Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1 sweet potato, peeled and cubed
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can (400g) chickpeas, drained
  • 1 can (400g) diced tomatoes
  • 3 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps:

  1. Heat olive oil in a large pot or tagine over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in cumin, coriander, and cinnamon.
  4. Add sweet potato, carrots, bell pepper, and zucchini. Cook for 5 minutes.
  5. Add chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
