A healthier twist on traditional fried rice, this no-fry version is packed with colorful vegetables and flavorful spices, making it a perfect vegan delight for any meal of the day.
Ingredients
- 2 cups cooked brown rice, cooled
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots, thawed
- 1/2 cup corn
- 1/4 cup soy sauce
- 1/2 tsp ground ginger
- 1/4 tsp black pepper
- 2 green onions, chopped
- 1/4 cup chopped cilantro
- Sriracha or other hot sauce (optional)
Steps:
- Heat the sesame oil in a large pan over medium heat.
- Add the garlic and sauté until fragrant.
- Increase the heat to medium-high and add the peas and carrots, corn, and cooked rice. Stir well to combine.
- Pour the soy sauce, ground ginger, and black pepper over the rice mixture. Stir well and cook for 5-7 minutes, or until the rice is heated through.
- Remove from heat and stir in the green onions and cilantro.
