A healthier twist on traditional fried rice, this no-fry version is packed with colorful vegetables and flavorful spices, making it a perfect vegan delight for any meal of the day.

Ingredients

  • 2 cups cooked brown rice, cooled
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 1/2 cup corn
  • 1/4 cup soy sauce
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • Sriracha or other hot sauce (optional)

Steps:

  1. Heat the sesame oil in a large pan over medium heat.
  2. Add the garlic and sauté until fragrant.
  3. Increase the heat to medium-high and add the peas and carrots, corn, and cooked rice. Stir well to combine.
  4. Pour the soy sauce, ground ginger, and black pepper over the rice mixture. Stir well and cook for 5-7 minutes, or until the rice is heated through.
  5. Remove from heat and stir in the green onions and cilantro.
