Ingredients
- 4 large Portobello mushroom caps, stems removed
- 1/4 cup balsamic vinegar
- 2 tablespoons soy sauce (or tamari for gluten-free option)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme or oregano
- Salt and pepper to taste
- 4 whole wheat or vegan hamburger buns, toasted
- Optional toppings: lettuce, tomato slices, avocado slices, vegan mayo, mustard, ketchup, grilled onions
Steps:
- Clean the mushrooms by gently wiping them with a damp cloth. Do not rinse under water.
- Prepare the marinade by whisking together balsamic vinegar, soy sauce, olive oil, garlic, thyme, salt, and pepper in a bowl.
- Marinate the mushrooms by placing them in a shallow dish, gill-side up. Pour the marinade over the mushrooms, ensuring they are well-coated. Let them marinate for at least 15 minutes, or up to an hour for deeper flavor.
- Preheat the grill to medium-high heat. Once hot, grill the mushrooms on each side for about 5-6 minutes, or until they are tender and grill marks appear.
- Assemble the burgers by placing each grilled mushroom on a toasted bun. Add your choice of toppings such as lettuce, tomato, avocado, vegan mayo, mustard, and ketchup.
- Serve immediately while warm and juicy.
