Juicy, marinated portobello mushrooms serve as the meaty centerpiece of these tacos, stuffed into warm tortillas and topped with a vibrant array of vegetables and a creamy avocado sauce for a delightful Mexican-inspired feast.

Ingredients

  • 4 large portobello mushrooms (sliced)
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 teaspoon chili powder
  • 8 small corn tortillas
  • 1 avocado (mashed)
  • 1 lime (juiced)
  • 1 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Salt and Pepper to taste

Steps:

  1. Marinate portobello sliced in olive oil, soy sauce, paprika, cumin, and chili powder for 30 minutes
  2. Grill or saute mushrooms until tender
