Juicy, marinated portobello mushrooms serve as the meaty centerpiece of these tacos, stuffed into warm tortillas and topped with a vibrant array of vegetables and a creamy avocado sauce for a delightful Mexican-inspired feast.
Ingredients
- 4 large portobello mushrooms (sliced)
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 teaspoon chili powder
- 8 small corn tortillas
- 1 avocado (mashed)
- 1 lime (juiced)
- 1 cup shredded cabbage
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Salt and Pepper to taste
Steps:
- Marinate portobello sliced in olive oil, soy sauce, paprika, cumin, and chili powder for 30 minutes
- Grill or saute mushrooms until tender
- Mix mashed avocado with lime juice, salt, and pepper to make the sauce
- Warm tortillas, then fill with mushroom cabbage, and cilantro
- Drizzle with avocado sauce before serving
