    Recipe Description

    Juicy, marinated portobello mushrooms serve as the meaty centerpiece of these tacos, stuffed into warm tortillas and topped with a vibrant array of vegetables and a creamy avocado sauce for a delightful Mexican-inspired feast.

    Ingredients

    • 4 large portobello mushrooms (sliced)
    • 2 tbsp olive oil
    • 2 tbsp soy sauce
    • 1 tsp smoked paprika
    • 1 tsp ground cumin
    • 1/2 teaspoon chili powder
    • 8 small corn tortillas
    • 1 avocado (mashed)
    • 1 lime (juiced)
    • 1 cup shredded cabbage
    • 1/2 cup diced tomatoes
    • 1/4 cup chopped cilantro
    • Salt and Pepper to taste

    Steps:

    1. Marinate portobello sliced in olive oil, soy sauce, paprika, cumin, and chili powder for 30 minutes
    2. Grill or saute mushrooms until tender
    3. Mix mashed avocado with lime juice, salt, and pepper to make the sauce
    4. Warm tortillas, then fill with mushroom cabbage, and cilantro
    5. Drizzle with avocado sauce before serving
    6. Serve
