    Quinoa Khichdi is a nutritious, vegan twist on the traditional Indian dish that typically combines rice and lentils. It’s simmered with a variety of aromatic spices such as turmeric, cumin, and mustard seeds, along with a bounty of vegetables for a wholesome, balanced meal.     Ingredients

    • 1 cup quinoa
    • 1/2 cup mixed lentils
    • 1 carrot, diced
    • 1 bell pepper, diced
    • 1 teaspoon turmeric
    • 1 teaspoon cumin seeds
    • 1/2 teaspoon mustard seeds
    • 1 tablespoon olive oil
    • Salt to taste
    • 4 cups water
    • Cilantro for garnish

    Steps:

    1. Rinse and soak quinoa and lentils for 30 minutes.
    2. Heat oil in a pot. Add mustard seeds and cumin seeds until they start to pop.
    3. Add diced vegetables and sauté for 2-3 minutes.
    4. Add quinoa, lentils, turmeric, salt, and water. Bring to a boil, then simmer for 20 minutes.
    5. Garnish with cilantro before serving.
