This Apple & Walnut Vegan Rotkohl combines the traditional earthy flavors of red cabbage with the natural sweetness of apples and a crunchy texture of walnuts.
Method
Tested in our kitchen
Heat olive oil in a large pot over medium heat.
Add onions and sauté until translucent.
Mix in the red cabbage and cook for 10 minutes, stirring occasionally.
Add diced apples, walnuts, vinegar, brown sugar, salt, pepper, and bay leaves.
Cover and simmer for about 50 minutes, or until the cabbage is tender and flavors are well-combined.
