BBQ Jackfruit Sandwiches

Rinse and drain the jackfruit. Use your hands to shred the jackfruit into pieces that resemble pulled pork.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
Add the shredded jackfruit to the skillet along with the smoked paprika, ground cumin, and cayenne pepper. Stir to combine and cook for another 5 minutes.
Pour the barbecue sauce over the jackfruit mixture and reduce the heat to low. Cover and simmer for 20-25 minutes, until the jackfruit is tender and the flavors have melded.
Season the BBQ jackfruit with salt and pepper to taste.
