Vegan Caramel Slice

Method

Preheat oven to 180°C (350°F). Line a square baking dish with parchment paper.
Mix almond flour, coconut flour, melted coconut oil, and maple syrup in a bowl. Press the mixture into the bottom of the prepared dish.
Bake for 10 minutes. Let cool while preparing the caramel.
For the caramel, combine coconut milk and coconut sugar in a saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil. Reduce heat to low, add almond butter, vanilla extract, and salt. Simmer for 20 minutes, stirring occasionally until thickened.
Pour the caramel over the cooled base. Place in the refrigerator to chill for at least 2 hours, or until set.
Refrigerate until the chocolate sets. Cut into squares and serve.
