Preheat oven to 350°F (175°C).
Boil sweet potatoes whole until soft, about 45 minutes. Let cool, then peel and mash.
In a large bowl, combine mashed sweet potatoes, maple syrup, coconut milk, coconut oil, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
Pour the filling into the vegan pie crust.
Bake for 55-60 minutes, or until the pie filling is set.
