Method
Tested in our kitchen
In a large pot, heat sesame oil over medium heat. Add garlic and ginger; sauté until fragrant.
Add the carrots and mushrooms to the pot and cook for about 3 minutes.
Pour in the vegetable broth, soy sauce, and mirin. Bring to a simmer.
Add the udon noodles to the pot and cook according to package instructions, usually about 8-10 minutes.
Stir in the spinach and green onions, cooking until the spinach wilts (about 2 minutes).
