In a large bowl, combine cabbage, mushrooms, carrot, crumbled tofu, garlic, ginger, soy sauce, and sesame oil. Season with salt and pepper.
Place a small spoonful of filling in the center of each gyoza wrapper. Wet the edges of the wrapper with water and fold, pleating the edges to seal.
Heat oil in a large pan over medium heat. Place gyozas in the pan and fry until the bottoms are golden brown.
Add a small amount of water to the pan, cover, and steam the gyozas for about 5 minutes, or until the water has evaporated.
Serve hot with a side of soy sauce and vinegar for dipping.
