Heat olive oil in a large pot over medium heat.
Add onions and garlic and cook until soft.
Add vegan sausages to the pot and brown slightly.
Add carrots, potatoes, vegetable broth, and thyme to the pot. Season with salt and pepper.
Bring to a boil, then reduce heat to low and simmer covered for about 1 hour, or until vegetables are tender.
Serve hot, garnished with fresh parsley.
