Method

Heat the olive oil in a large pot over medium heat.
Add the diced onions, garlic, and bell peppers, and sauté for about 5 minutes or until the onions become translucent.
Stir in the chopped Lalo leaves and cook for about 10 minutes, until they begin to wilt.
Pour in the vegetable broth and coconut milk, bringing the mixture to a boil.
Season with salt, pepper, thyme, and Scotch bonnet pepper (if using).
