Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
In a bowl, mix zucchini, onion, flour, nutritional yeast, baking powder, salt, and pepper until well combined.
Heat oil in a pan over medium heat.
Form the mixture into patties and fry until golden brown on both sides, about 5 minutes per side.
Drain on paper towels and serve hot.
