A creamy and comforting soup made with sweet potatoes, peanut butter, tomato, and spices.
Method

Heat olive oil in a large pot over medium heat.

Saute onion, garlic, and ginger until the onion is translucent.

Add sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat to simmer.

Cook until sweet potatoes are tender, about 20 minutes.

Stir in the peanut butter and cayenne pepper until the peanut butter is completely mixed.

Season with salt and pepper.

Serve hot, garnished with fresh cilantro.
