Recipe Description

A vibrant, nutrient-rich quinoa salad loaded with fresh vegetables and a tangy lemon vinaigrette. Perfect for a light lunch or as a side dish for dinner.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Steps:

  1. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and allow to cool.
  3. In a large bowl, combine the cooled quinoa, cucumber, bell pepper, red onion, cherry tomatoes, parsley, and mint.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
