    Recipe Description

    These vegan Sicilian rice balls are perfectly crispy on the outside and creamy on the inside, filled with a savory mixture of mushrooms and peas.

    Ingredients

    • 2 cups cooked and cooled arborio rice
    • 1 cup diced mushrooms
    • 1/2 cup peas
    • 1/4 cup nutritional yeast
    • 1 tbsp olive oil
    • 2 cloves garlic, minced
    • 1 tsp dried Italian herbs
    • Salt and pepper to taste
    • 1 cup breadcrumbs, for coating
    • Vegetable oil for frying

    Steps:

    1. In a skillet, heat olive oil. Add garlic, mushrooms, and peas. Cook until soft.
    2. Mix cooked vegetables with rice, nutritional yeast, Italian herbs, salt, and pepper.
    3. Form the mixture into balls and coat each ball with breadcrumbs.
    4. Heat vegetable oil in a deep skillet and fry rice balls until golden brown.
    5. Serve hot with marinara sauce for dipping.
