These vegan Sicilian rice balls are perfectly crispy on the outside and creamy on the inside, filled with a savory mixture of mushrooms and peas.
Ingredients
- 1 cup diced mushrooms
- 1/2 cup peas
- 1/4 cup nutritional yeast
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- Salt and pepper to taste
- 1 cup breadcrumbs, for coating
- Vegetable oil for frying
Steps:
- In a skillet, heat olive oil. Add garlic, mushrooms, and peas. Cook until soft.
- Mix cooked vegetables with rice, nutritional yeast, Italian herbs, salt, and pepper.
- Form the mixture into balls and coat each ball with breadcrumbs.
- Heat vegetable oil in a deep skillet and fry rice balls until golden brown.
- Serve hot with marinara sauce for dipping.
