Ingredients
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 4 cups vegetable broth
- 3 cups cooked black-eyed peas
- 1 can diced tomatoes
Steps:
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and sauté until softened.
- Mix in the red bell pepper and carrots and cook for 5 minutes.
- Stir in the smoked paprika and cayenne pepper and cook for another minute.
- Pour in the vegetable broth, black-eyed peas, and diced tomatoes. Bring to a simmer.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
