    Smoky Vegan Black Eyed Pea Stew

    Recipe Description

    A hearty and flavorful stew that’s perfect for cold winter days. Packed with smoky spices, vegetables, and black-eyed peas, it’s a comforting and nutritious choice that’s sure to satisfy.

    Ingredients

    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 1 red bell pepper, diced
    • 2 carrots, diced
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cayenne pepper
    • 4 cups vegetable broth
    • 3 cups cooked black-eyed peas
    • 1 can diced tomatoes

    Steps:

    1. Heat the olive oil in a large pot over medium heat.
    2. Add the onion and garlic and sauté until softened.
    3. Mix in the red bell pepper and carrots and cook for 5 minutes.
    4. Stir in the smoked paprika and cayenne pepper and cook for another minute.
    5. Pour in the vegetable broth, black-eyed peas, and diced tomatoes. Bring to a simmer.
    6. Season with salt and pepper to taste.
    7. Serve hot, garnished with fresh parsley.
