Recipe Description

A spicy vegetable relish that’s a staple in South African cuisine. Made with tomatoes, peppers, carrots, beans, and spices, it’s the perfect vegan side dish or main course.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, grated
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 can (400g) crushed tomatoes
  • 1 can (400g) baked beans in tomato sauce
  • Salt and chili flakes to taste

Steps:

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add green and red bell peppers, and carrots. Cook for about 5 minutes.
  4. Stir in curry powder and paprika.
  5. Add crushed tomatoes and baked beans. Simmer for 25 minutes, stirring occasionally.
  6. Serve warm as a side or with rice as a main dish.
