Recipe Description
A spicy vegetable relish that’s a staple in South African cuisine. Made with tomatoes, peppers, carrots, beans, and spices, it’s the perfect vegan side dish or main course.
Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 carrots, grated
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 can (400g) crushed tomatoes
- 1 can (400g) baked beans in tomato sauce
Steps:
- Heat oil in a large skillet over medium heat.
- Add onion and garlic, cook until softened.
- Add green and red bell peppers, and carrots. Cook for about 5 minutes.
- Stir in curry powder and paprika.
- Add crushed tomatoes and baked beans. Simmer for 25 minutes, stirring occasionally.
- Serve warm as a side or with rice as a main dish.
