    Ingredients

    • 1 large onion, finely chopped
    • 3 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/4 teaspoon cayenne pepper
    • 2 bunches spinach, roughly chopped
    • 1 preserved lemon, rind finely chopped
    • Salt and pepper to taste
    • 1 cup vegetable broth

    6. Cover and cook on low heat for 30 minutes, stirring occasionally.
    7. Garnish with chopped cilantro before serving.
