    Ingredients

    • 2 tablespoons olive oil
    • 1 large onion, finely chopped
    • 3 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/4 teaspoon cayenne pepper
    • 2 bunches spinach, roughly chopped
    • 1 preserved lemon, rind finely chopped
    • Salt and pepper to taste
    • 1 cup vegetable broth

    2. Add onion and garlic, cooking until soft.
    3. Stir in cumin, coriander, and cayenne pepper, cooking for a minute until fragrant.
    4. Add the spinach in batches, allowing each batch to wilt down.
    5. Stir in preserved lemon, salt, and pepper.
    6. Cover and cook on low heat for 30 minutes, stirring occasionally.
    7. Garnish with chopped cilantro before serving.
