Recipe Description
Savory vegan stuffed mushroom caps filled with a delicious mixture of spinach, vegan cream cheese, and breadcrumbs.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1/2 cup vegan cream cheese
- 1/2 cup breadcrumbs
- Salt to taste
- Pepper to taste
- Paprika for garnish
Steps:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté onion and garlic until tender.
- Add spinach and cook until wilted.
- Remove from heat and mix in vegan cream cheese and breadcrumbs. Season with salt and pepper.
- Stuff each mushroom cap with the mixture and arrange on a baking sheet.
- Bake for 20-25 minutes, or until mushrooms are tender.
- Serve hot.
