Ingredients
- 2 large sweet potatoes, peeled and sliced
- 1 tablespoon olive oil
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 4 vegan pita breads
- 1 cup hummus
- 1 small red onion, thinly sliced
- 1 cup chopped lettuce
- 1/2 cup diced tomatoes
- 2 tablespoons tahini
- 1 tablespoon lemon juice
Steps:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato slices with olive oil, cumin, smoked paprika, cinnamon, cayenne, and salt until evenly coated.
- Spread the sweet potato slices on the prepared baking sheet in a single layer. Roast for 20-25 minutes, turning halfway through, until tender and lightly browned.
- Warm the pita breads in the oven during the last few minutes of cooking.
- Spread hummus on each pita, then top with roasted sweet potato, red onion, lettuce, and tomatoes.
