Ingredients
- 1 block firm tofu, pressed and cubed
- 3 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1 tablespoon garam masala
- 1 teaspoon paprika
- 2 cups crushed tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, chopped for garnish
Steps:
- 1. Heat 2 tablespoons of oil in a pan over medium heat. Add the onions and sauté until translucent.
- 2. Add garlic and ginger, cook for another 2 minutes.
- 3. Stir in cumin, turmeric, garam masala, and paprika, cook for 1 minute until fragrant.
- 4. Add crushed tomatoes and simmer for 10 minutes.
- 5. In a separate pan, heat the remaining oil and brown tofu cubes until golden.
- 7. Season with salt, garnish with cilantro, and serve.
