Recipe Description

This Vegan Acorn Bread is a delightful homage to traditional Native American recipes, skillfully adapted for today’s vegan diet. Combining the earthy flavor of acorn meal with the wholesomeness of whole wheat flour, this bread is both nutritious and unique in taste. It’s perfect for welcoming the cozy ambiance of fall and is particularly enjoyable when served warm with a spread of vegan butter or jam.

Ingredients

  • 2 cups acorn meal
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp maple syrup
  • 1 cup almond milk
  • 1/4 cup apple sauce
  • 2 tbsp flaxseed meal mixed with 6 tbsp water

Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together acorn meal, whole wheat flour, baking powder, and salt.
  3. In another bowl, whisk together maple syrup, almond milk, apple sauce, and flaxseed-water mixture until smooth.
  4. Combine wet and dry ingredients and stir until just mixed.
  5. Pour batter into a greased loaf pan.
  6. Allow to cool in the pan for 10 minutes, then remove from pan and let cool completely on a wire rack.
