Combining the earthy flavor of acorn meal with the wholesomeness of whole wheat flour, this bread is both nutritious and unique in taste. Ingredients

  • 2 cups acorn meal
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp maple syrup
  • 1 cup almond milk
  • 1/4 cup apple sauce
  • 2 tbsp flaxseed meal mixed with 6 tbsp water

Steps:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together acorn meal, whole wheat flour, baking powder, and salt.
  3. In another bowl, whisk together maple syrup, almond milk, apple sauce, and flaxseed-water mixture until smooth.
  4. Combine wet and dry ingredients and stir until just mixed.
  5. Pour batter into a greased loaf pan.
  6. Allow to cool in the pan for 10 minutes, then remove from pan and let cool completely on a wire rack.
