Ingredients
- 400 grams firm tofu, drained and pressed
- 1/4 cup cornstarch
- 2 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 teaspoon sugar
- Oil for frying
- 1 green onion, finely chopped
- 1 tablespoon grated ginger
- Vegan bonito flakes (optional)
Steps:
- Cut tofu into cubes.
- Dust tofu cubes with cornstarch.
- Heat oil and fry tofu until golden and crispy.
- In a saucepan, combine vegetable broth, soy sauce, mirin, and sugar. Bring to a simmer.
- Place fried tofu in a serving bowl. Pour the hot broth over the tofu.
