    This vegan Aloo Matar is a delightful and aromatic dish that combines the heartiness of potatoes with the sweetness of green peas, all simmered in a rich tomato-based sauce. Spiced with traditional Indian herbs and spices, this dish offers a comforting blend of flavors that is both nourishing and satisfying. Perfect for any meal, it pairs wonderfully with rice or naan for a complete meal.

    Ingredients

    • 2 tablespoons vegetable oil
    • 1 teaspoon cumin seeds
    • 1 large onion, finely chopped
    • 2 cloves garlic, minced
    • 1 inch ginger, minced
    • 2 large potatoes, cubed
    • 1 cup frozen green peas
    • 2 tomatoes, pureed
    • 1 teaspoon turmeric powder
    • 1 teaspoon garam masala
    • 1/2 teaspoon red chili powder
    • Salt to taste
    • 2 cups water
    • Fresh cilantro for garnish

    Steps:

    1. Heat oil in a pan over medium heat.
    2. Add cumin seeds and let them sizzle.
    3. Add onions and sauté until golden brown.
    4. Mix in garlic and ginger, and cook for another minute.
    5. Add potatoes, peas, tomatoes, turmeric, garam masala, red chili powder, and salt. Stir well.
    6. Garnish with cilantro and serve hot.
