Ingredients
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups almond milk (or any plant-based milk)
- 1/4 cup maple syrup, plus more for drizzling
- 1 teaspoon vanilla extract

- 2 bananas, sliced
Steps:
- Preheat Oven and Prepare Pan: Preheat the oven to 375°F (190°C). Lightly grease an 8-inch square baking dish.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- Add Wet Ingredients: In another bowl, whisk together the almond milk, 1/4 cup maple syrup, and vanilla extract. Pour this mixture into the dry ingredients and stir until combined.
- Prepare Bananas: Heat the coconut oil in a skillet over medium heat. Add the banana slices and cook until they are caramelized, about 2-3 minutes per side. Drizzle with a little maple syrup towards the end
- Assemble: Fold the blueberries into the oat mixture. Pour half of the oat mixture into the prepared baking dish. Layer half of the caramelized bananas over the oats. Repeat with the remaining oat mixture and bananas.
- Bake: Bake for 35-40 minutes, or until the top is golden and the oats are set.
- Serve: Let the baked oatmeal cool for a few minutes before slicing. Serve warm, topped with additional blueberries, banana slices, chopped nuts, and a drizzle of maple syrup if desired.
