Recipe Description

A creamy, comforting gratin that transforms Belgian endive into a delicious, caramelized dish with a golden, crunchy topping.

Ingredients

  • 4 Belgian endives, halved
  • 2 tablespoons olive oil
  • 1 cup unsweetened almond milk
  • 2 tablespoons nutritional yeast
  • 1 garlic clove, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup crushed walnuts
  • Salt and pepper to taste

Steps:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and endives, cut side down. Cook until browned, about 5 minutes.
  3. In a saucepan, whisk together almond milk, nutritional yeast, garlic, salt, and pepper. Bring to a simmer.
  4. Place endives in a baking dish, cut side up. Pour the almond milk mixture over the endives.
  5. Mix breadcrumbs and crushed walanches together, then sprinkle over the endives.
