Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/4 cup nutritional yeast
- For Croutons: 2 cups cubed bread, 1 tablespoon olive oil, 1 teaspoon dried basil
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until onion is translucent.
- Add broccoli florets and cook for 5 minutes.
- Pour in vegetable broth and bring to a simmer.
- Season with salt and pepper.
- Transfer soup to a blender, add nutritional yeast, and blend until smooth.
- To make croutons, toss bread cubes with olive oil and basil.
- Bake in preheated oven (375°F) until golden, about 10 minutes.
- Serve soup hot, topping with croutons.
