    Ingredients

    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 4 cups broccoli florets
    • 4 cups vegetable broth
    • Salt and pepper to taste
    • 1/4 cup nutritional yeast
    • For Croutons: 2 cups cubed bread, 1 tablespoon olive oil, 1 teaspoon dried basil

    Steps:

    1. Heat olive oil in a large pot over medium heat.
    2. Add onion and garlic; sauté until onion is translucent.
    3. Add broccoli florets and cook for 5 minutes.
    4. Pour in vegetable broth and bring to a simmer.
    5. Season with salt and pepper.
    6. Transfer soup to a blender, add nutritional yeast, and blend until smooth.
    7. To make croutons, toss bread cubes with olive oil and basil.
    8. Bake in preheated oven (375°F) until golden, about 10 minutes.
    9. Serve soup hot, topping with croutons.
