Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast
  • For Croutons: 2 cups cubed bread, 1 tablespoon olive oil, 1 teaspoon dried basil
