Recipe Description
These vibrant and delicious tacos feature roasted cauliflower as the star ingredient. Paired with a zesty lime slaw and avocado cream, they’re a perfect meal for any day of the week.
Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/4 cabbage, thinly sliced
- 2 limes, juiced
- 1 ripe avocado
- 1/2 cup coconut yogurt
- salt and pepper to taste
- 8 small corn tortillas
Steps:
- Preheat oven to 425°F (220°C).
- Toss cauliflower florets with olive oil, chili powder, garlic powder, and cumin. Spread on a baking sheet and roast for 20-25 minutes.
- Combine cabbage with half of the lime juice, and a pinch of salt. Let it marinate.
- Mash the avocado and mix with coconut yogurt and the remaining lime juice. Season with salt and pepper.
- Warm tortillas according to package instructions.
