Recipe Description

These vibrant and delicious tacos feature roasted cauliflower as the star ingredient. Paired with a zesty lime slaw and avocado cream, they’re a perfect meal for any day of the week.

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/4 cabbage, thinly sliced
  • 2 limes, juiced
  • 1 ripe avocado
  • 1/2 cup coconut yogurt
  • salt and pepper to taste
  • 8 small corn tortillas

Steps:

  1. Preheat oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, chili powder, garlic powder, and cumin. Spread on a baking sheet and roast for 20-25 minutes.
  3. Combine cabbage with half of the lime juice, and a pinch of salt. Let it marinate.
  4. Mash the avocado and mix with coconut yogurt and the remaining lime juice. Season with salt and pepper.
  5. Warm tortillas according to package instructions.
