Crispy on the outside, juicy on the inside, these vegan Chinese chive pockets are filled with fragrant chives, glass noodles, and an assortment of vegetables.

Ingredients

  • 2 cups chopped Chinese chives
  • 1 cup soaked and chopped glass noodles
  • 1/2 cup shredded carrot
  • 1/4 cup minced tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste
  • Dough (or store-bought dumpling wrappers)
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup boiling water

Steps:

  1. Prepare the dough by mixing flour and salt, then slowly adding boiling water until a soft dough forms. Let it rest for 30 minutes.
  2. Mix chives, glass noodles, carrot, tofu, soy sauce, sesame oil, and salt in a bowl.
  3. Divide the dough into small balls and roll each out into a thin circle.
  4. Place a spoonful of the filling into the center of each circle, fold, and seal the edges.
  5. Heat a pan with a thin layer of oil. Place the chive pockets in the pan and cook until golden brown on both sides.
