Ingredients

  • 1 vegan pie crust
  • 2 cups pecans, halved
  • 3/4 cup brown sugar
  • 1/2 cup maple syrup
  • 1/4 cup cornstarch
  • 1 cup almond milk
  • 1 cup vegan chocolate chips
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Steps:

  1. Preheat the oven to 350°F (175°C).
  2. Arrange the pecans in the bottom of the vegan pie crust.
  3. In a saucepan, combine brown sugar, maple syrup, cornstarch, and almond milk. Heat over medium, stirring until the mixture thickens.
  4. Add vegan chocolate chips and stir until melted.
  5. Remove from heat and mix in coconut oil, vanilla extract, and salt.
  6. Bake for 45 minutes, or until the pie is set.
