Ingredients
- 1 vegan pie crust
- 2 cups pecans, halved
- 3/4 cup brown sugar
- 1/2 cup maple syrup
- 1/4 cup cornstarch
- 1 cup almond milk
- 1 cup vegan chocolate chips
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Steps:
- Preheat the oven to 350°F (175°C).
- Arrange the pecans in the bottom of the vegan pie crust.
- In a saucepan, combine brown sugar, maple syrup, cornstarch, and almond milk. Heat over medium, stirring until the mixture thickens.
- Add vegan chocolate chips and stir until melted.
- Remove from heat and mix in coconut oil, vanilla extract, and salt.
- Bake for 45 minutes, or until the pie is set.
