This vegan take on the traditional Haitian dish, Diri ak Djon Djon, offers a unique and flavorful dining experience. Made with the rare black mushroom native to Haiti, this dish features aromatic jasmine rice infused with the earthy tones of the mushrooms, enhanced with spices and vegetables for a hearty and fulfilling meal.
Ingredients
- 1 cup dried black mushrooms (Djon Djon)
- 2 cups jasmine rice
- 1 medium onion, finely chopped
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 3 cups water
- 1 tbsp coconut oil
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced carrots
- 1/2 cup fresh green peas
Steps:
- Wash and soak the Djon Djon mushrooms in 3 cups of hot water for 20 minutes. Strain and reserve the liquid.
- In a pot, heat the coconut oil over medium heat. Add the chopped onions, garlic, and bell peppers, and sauté until onions are translucent.
- Stir in the carrots and peas, then add the washed rice, mixing thoroughly.
- Pour the reserved mushroom liquid over the rice. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 20 minutes or until the rice is cooked.
