Ingredients
- 1 tablespoon olive oil
- 2 medium onions, sliced
- 2 cloves garlic, minced
- 4 vegan sausages, sliced
- 2 large carrots, sliced
- 1 pound potatoes, cubed
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic and cook until soft.
- Add vegan sausages to the pot and brown slightly.
- Add carrots, potatoes, vegetable broth, and thyme to the pot. Season with salt and pepper.
- Bring to a boil, then reduce heat to low and simmer covered for about 1 hour, or until vegetables are tender.
