Ingredients
- 1/2 cup vegan butter, softened
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup almond milk
- 1/2 cup raspberry jam
- 1 cup powdered sugar
- 2 tbsp lemon juice
Steps:
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together vegan butter and granulated sugar until light and fluffy.
- Mix in vanilla extract and almond milk until well combined.
- Gradually add flour and salt to the wet mixture to form a soft dough.
- Roll out dough on a floured surface to about 1/4 inch thickness and cut into circles using a cookie cutter.
- Allow to cool completely.
- Spread raspberry jam on half of the cookies and top with another cookie to form a sandwich.
- Mix powdered sugar and lemon juice to create a smooth icing.
- Drizzle icing over the cookies and allow to set before serving.
