Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter, softened
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup almond milk
  • 1/2 cup raspberry jam
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

  7. Spread raspberry jam on half of the cookies and top with another cookie to form a sandwich.
  8. Mix powdered sugar and lemon juice to create a smooth icing.
  9. Drizzle icing over the cookies and allow to set before serving.
