Recipe Description
A hearty and delicious Vegan Nut Roast packed with nuts, lentils, and vegetables. Perfect for a cozy autumn dinner or as a festive holiday main course.
Ingredients
- 100g red lentils
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 stick celery, finely chopped
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp soy sauce
Steps:
- Preheat the oven to 180°C (350°F, gas mark 4).
- In a large pan, cook the lentils in vegetable stock for 15 minutes, then drain.
- In a separate pan, sauté onion, garlic, carrot, and celery until soft.
- In a large bowl, combine the cooked lentils, sautéed vegetables, mixed nuts, breadcrumbs, tomato paste, soy sauce, thyme, rosemary, salt, and pepper.
- Press the mixture into a greased loaf tin.
- Let it cool slightly before turning out of the tin. Serve warm.
