Ingredients
- 2 cups shiro powder
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 3 tablespoons berbere spice mix
- 6 cups water
- Salt to taste
- 3 tablespoons olive oil
Steps:
- Heat olive oil in a large pot over medium heat.
- Add onions and cook until transparent.
- Add garlic and cook for another minute until fragrant.
- Stir in the berbere spice mix, coating the onions and garlic.
- Add the shiro powder and mix thoroughly.
- Cook on low heat for 30-40 minutes, stirring frequently to prevent sticking.
- Adjust the thickness by adding water if necessary. Season with salt.
- Serve hot with Injera or rice.
