Delightfully spiced and perfectly sweet, these Vegan Gingerbread Cookies are a festive favorite, made with plant-based ingredients for a guilt-free holiday treat.
Ingredients
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 cup vegan margarine
- 1/2 cup brown sugar, packed
- 1/4 cup molasses
- 1 flax egg (1 tbsp flaxseed meal with 3 tbsp water)
Steps:
- Preheat oven to 350°F (175°C).
- In a small bowl, prepare the flax egg by mixing the flaxseed meal and water. Set aside.
- In a large bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- In another bowl, cream together vegan margarine and brown sugar until fluffy. Beat in molasses and the flax egg.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Bake for 8-10 minutes or until the edges start to turn golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
